Mark’s like all wine makers has strong feelings on oak barrels. For our reserve he uses two barrels one new, one a year old for 75 % new oak to be layered in to the Cabernet Sauvignon. The new barrel is from the forest of Tronçais Jupilles and adds an underlying chocolate note to complement a white flower on the nose. The dried plum melts together with hints of tobacco and graphite mineral flavors. This Cabernet is full and powerful will age very gracefully and would benefit from decanting when consumed.
