Our first vintage using a new concrete egg made just for our Sauvignon Blanc shows why Mark loves using concrete. With the natural stirring during fermentation created by the egg’s shape you can feel the structure Mark likes to build for this varietal. A pale-yellow straw color invites you to smell Elder Flower on the nose chased by white Peach with a phenolic warmth created by whole cluster press give this wine great depth of aroma. A full and textured palate of Meyer lemon, guava, supported by acidity and wet stone minerality in the mid palate finishing with lemon curd and honeydew melon.
