The 2022 Sauvignon Blanc is our second vintage fermenting in a custom concrete egg. Concrete, Mark's signature fermentation style, using convection to stir the lees and created a profile that reflects the best Sauvignon Blanc has to offer. Concrete evolves. It seasons over time allowing each new vintage to create its own unique identity. You get a feel for the structure and body right away with the powerful layered nose and fruity aromatics. A deep bouquet of tropical and citrus intermixed with a hint of white flower and guava. Meyer lemon comingled with a strong underpinning of acidity in the mid-palate finishing with a touch of green apple and umami salinity. A patio wine is an understatement as this bottling will stand up to seasoned ethnic food like spicy Thai, or the simplicity of herbed white meats.
